I was getting tired of the same old appetizers I had been making for years for our monthly girls’ wine nights and wanted badly to try something different.
I have had a bit of an obsession with bacon lately, so I wanted to somehow incorporate that into my new treat. I was perusing Pinterest one day for appetizers and came across some bacon wrapped chicken bites.
I found a few variations, which I thought would be almost perfect. I improvised and made my own version and added in a delicious spicy avocado cilantro dipping sauce. The result was amazing!
Ingredients for the chicken bites:
- 1 pack of bacon
- 2-3 boneless skinless chicken breasts or one package of pre-cut chicken tenders (I prefer the pre-cut tenders as they are easier to use)
- salt and pepper to taste
- garlic
- Mrs. Dash’s Southwest Chipotle Seasoning
- Toothpicks
Ingredients for the dipping sauce:
- 3 medium avocados
- 1 jalapeño
- 1/2 cup water
- 1/2 coconut milk (full fat)
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/4 cup packed cilantro
- 1/2 tsp ground cumin
- 1 tsp salt

To make the chicken bites:
Cut the bacon strips in thirds and the chicken in cubes. Generously toss the chicken cubes in garlic, salt, pepper and Southwest Chipotle seasoning.
Wrap the bacon around each piece of chicken, securing the bacon with a toothpick.
Bake at 350 degrees F for 30 minutes on a cookie sheet. Turn the oven to broil and broil for 10 additional minutes.
Directions for the avocado cilantro dipping sauce:
Cut the avocados in half, removing the pits and scrape the avocado into a blender. Add the liquids and dry ingredients. Blend on high until smooth.
